Chinese Chicken and Broccoli
Ingredients:1 1/2lbs boneless skinless chicken breasts (cut into small chunks)1 ½ tablespoons sesame oil2 tablespoons garlic (chopped)¼ teaspoon dried red pepper flakes (or more to taste)4 cups fresh broccoli florets6 tablespoons chicken broth (divided)1 tablespoon sesame oilsalt and pepper5 green onions (sliced)¼ cup hoisin sauce3 tablespoons oyster sauceSesame seeds (for garnish, optional)
Step 1: Heat a wok (or large skillet) over medium-high heat. Add 1 ½ tablespoons sesame oil. Add garlic and dried red pepper flakes. Stir fry for 30 seconds. Add broccoli florets and 4 tablespoons chicken broth. Stir fry broccoli for 2 minutes. Remove from pan and set aside.
Step 2: Add a little more sesame oil to the wok (about 1 tablespoon). Season chicken bits with salt and pepper. Add to the wok and cooked until chicken is fully cooked (about 3-5 minutes).
Step 3: Add in remaining 2 tablespoons of chicken broth, oyster sauce, and hoisin sauce. Add broccoli mix well and cook until the mixture has become well heated. Serve with white rice.

Vegan Gluten Free Oatmeal Waffles
1 1/4 cup almond milk + 1 tsp white or apple cider vinegar
1/4 cup melted vegan butter, such as Earth Balance
1 1/2 tsp pure vanilla extract
2 Tbsp agave nectar or maple syrup
1 cup brown rice flour
1/2 cup gluten free rolled oats
1/2 cup potato starch (not flour)
scant 1/4 cup tapioca flour
1 Tbsp flaxseed meal
pinch salt
1 1/2 tsp baking powder
2 Tbsp sugar
Combine almond milk and vinegar in a large liquid measuring cup and let set for a few minutes to curdle/activate. Then add melted butter, vanilla extract and agave nectar and whisk. Set aside.
Add dry ingredients to a large mixing bowl and whisk until well combined.
Add wet ingredients to dry and mix until well incorporated. Let set for 10-15 minutes while your waffle iron preheats. (I set mine to 4 out of 5 for a crispier waffle, but adjust yours according to preference.)
Once waffle iron is ready, generously coat with non-stick spray or vegan butter and pour on about 1/3 cup of batter. Cook according to manufacturer instructions and then remove and place on a baking rack in a 200 degree oven to keep warm. Do not stack and instead keep them in a single layer to ensure crispiness remains.
Serve immediately with desired toppings. Store leftovers in a freezer safe bag and reheat in the toaster for best results. Will keep in the freezer for up to a couple months, although they’re freshest within the first couple weeks.

KAIJU SUSHI (a dessert)

I saw Pacific Rim today and all I could think about during the scene [SPOILER] when Hannibal’s organ harvesters are inside the dead Kaiju [/SPOILER] was "Wow, if Kaiju weren’t horrible abominations that are probably incapable of being digested by humans, I bet they’d be great on the sushi market!" 

So, Kaiju sushi. It’s a super-thick altered rice pudding recipe with berry-flavored blue jello on top. The textures are similar so they don’t taste out-of-tune with each other, and it’s mostly creamy rice pudding with a splash of fruitiness from the jello. TL;DR - if you don’t like rice pudding, you probably shouldn’t eat this.
